I call these Weekend Crepes because I usually make them on the weekends when I have a little more time to stand at the stove, drinking my tea and swirling crepes, while the rest of the house sleeps.
One of the things I love about developing new recipes is taking a standard recipe that I have been making for a long time and changing it a little to making it a little healthier.
This is possibly the easiest recipe I have ever created that hits all the notes needed for a crowd-pleasing dish: salty, sweet, spicy, sour, and umami all come together to create a satisfying and balanced dish.
