Summer Peach Salsa

Summer time means sweet local peaches from the Farmers Market. I love finding different ways to enjoy fresh ripe peaches and in the summer heat a cold preparation is ideal. This salsa is super simple and delicious and it makes a great party side with chips! I also love using it as a topping for just about any grilled meat or fish.

Ingredients:

2 large peaches, pitted and cubed 

1 Tbsp minced red onion

2 tsp Chili Powder

1 Tbsp chopped cilantro, mint, or scallion greens 

How I Make It:

-Add peaches, onion, chili powder, and herbs in a medium bowl and stir to combine. (Be sure to stir again immediately before serving.)

-Top with additional herbs to garnish

Use whatever herbs are available to garnish; they add another layer of flavor to the salsa. There’s also nothing wrong with using all 3 that I have listed in the ingredients! I think that you will love this simple and versatile salsa to add something unexpected to your table at your next dinner or event. I love pairing it with my Roasted Salsa Verde so that there are a “Duo of Salsas” that allow everyone to go back and forth between sweet and spicy.
