Making Ramen noodles with real broth, a few leftovers, and some fresh ingredients is almost as easy as making it with the overly salty, artificial “flavor” packet but this version tastes 100 times better!
Ingredients:
2 cups of your favorite stock (mine is Homemade Chicken Stock)
1 package of Ramen Noodles (any flavor, because you are going to discard the “flavor” packet)
1 scallion, chopped (white and green pieces will be used separately)
1-2 oz of leftover vegetables cut into small pieces
3/4 tsp toasted sesame oil
3/4 tsp Sri Racha sauce (or the hot sauce of your choice)
1/2 tsp honey
2-3 tsp reduced sodium soy sauce (to your taste)
1/4 tsp rice wine vinegar
1 Tbsp or more chopped fresh herbs (cilantro, chives, mint, Thai basil, or any combination)
Optional ingredients:
1 clove fresh garlic, minced
1/2 tsp fresh ginger, grated
Dash of fish sauce
A halved, 4 minute egg
Squeeze of fresh lemon or lime
Sesame seeds
How I make it:
-Bring stock to boil in small sauce pan.
-Add white slices of scallion to the stock (reserve the green slices) as well as the sesame oil, Sri Racha, honey, soy sauce, rice wine vinegar, and the chopped veggies.
-Remove dehydrated noodles from package, discard package & flavor packet, break noodles in half, and add to stock, and cook for 2 minutes, stirring occasionally so that noodles get evenly cooked.
-While the Ramen is cooking, add the greens of the scallions to your bowl and atleast half of the fresh herbs.
-Carefully pour stock and noodles over fresh herbs, stir, and garnish with additional herbs, sesame seeds, and a squeeze of lime.
Tips:
*Breaking the noodles in half prior to cooking allows for better management of the eating the noodles with the vegetables (and allowing them to cool a little easier).
*I eat ramen with a spoon and fork and twirl it like spaghetti, then allow the noodles to cool on the fork while I go for some broth & veg with the spoon. If you just end up burning your mouth, trying to use the chopstick method, then try this method.
*Adding another half of a package of noodles is perfectly acceptable if you’re a true noodle-lover, like me!
Once you make your own ramen broth and throw in a few veggies and fresh herbs, you’ll be so happy that you tossed the packet!
