A gremolata is a classic Italian condiment typically used to add some freshness and bright acidity to rich savory dishes, such as stews, braises, and any variety of meat or fish. A traditional gremolata is made with raw garlic, parsley, and lemon.
My version breaks with tradition in favor of scallions (you can read more about how I use scallions in “All About Alliums”). The following recipe is a loose approximation, as I rarely measure when I am making it. It’s super simple and works on just about any savory dish. I love making this as a topping anytime I make a stew, a roast, tacos, mac and cheese, even hot dogs! Sprinkle a teaspoon full (or so) of gremolata on your favorite savory dishes and see how it will really make them pop!
Ingredients:
1 small bunch of parsley, finely chopped (approx 1/2 cup)
3 scallions, finely chopped
Zest & juice of 1/2 lemon
Pinch of kosher salt & a few grinds of black pepper
How I make it:
Combine all ingredients and allow to sit about 10 minutes before stirring well and serving.
