I love keeping packages of tortellini in my freezer so that I can have a healthy meal on the table in less than 20 minutes. This hardly qualifies as a proper recipe, BUT having this little trick in your dinner arsenal is beyond noteworthy!
Ingredients:
– 1 package refrigerated or frozen tortellini
– 8-10 oz frozen peas
– 1 Tbsp, or so, of your best Extra Virgin Olive Oil
– 1-2 Tbsp chopped fresh herbs (I often use basil, parsley, and chives)
– Freshly grated parmesan cheese
– Pine nuts, lightly toasted (optional)
How I make it:
– Fill a large pot with water and bring to a rolling boil & add 1 tsp salt
– Add tortellini and gently boil according to package instructions.
– 5 minutes before tortellini is finished cooking, add the frozen peas to the boiling pot.
– Drain tortellini and peas when fully cooked and toss with olive oil, pine nuts, and chopped herbs.
– Top with grated parmesan after plating and finish with additional herbs, and olive oil, if you like.
Tips:
– Adding some grated lemon zest and/or a squeeze of lemon juice adds a nice bright flourish at the end!
