Easy Guacamole

For game day or any day, guacamole is an ideal way to incorporate healthier snacking into our eating routine. It also works really well as a condiment on tacos, sandwiches, hot dogs, fish, or just on toast. The best guac is a fresh guac! I like to keep the ingredients simple so that it’s easy to whip up a quick batch whenever the universe gives me perfectly ripe avocados.

Ingredients:
– 2 Avocados
– 1 Tbsp finely chopped cilantro stems (plus a few leaves for garnish)
– 1 Tbsp Serrano or jalapeño, finely chopped (I like using any moderately spicy chili)
– juice of 1 Lime
– 1 large or 2 small scallions, finely chopped
– 1/2 tsp kosher salt

How I Make It:
– Cut avocados in half, remove pit and scoop into small food processor.
– Add lime juice then all other ingredients and pulse until desired consistency.
– Taste for seasoning and add salt, if needed (I usually don’t need to add any if I’m serving it with salty chips, but may if I’m serving as a dip with veggies).
– Garnish with cilantro leaves.
– Serve within a few hours of making it, while green is most vibrant.

Tips:
– Double the recipe for a party.
– If I’m making a quick batch to serve immediately, I may just chop all the ingredients, mix by hand, and serve; however if I need to keep it from turning brown for many hours, I make a smooth guac in the food processor which more evenly distributes the lime juice that helps slow oxidation.
– If you don’t have a spicy chili, or you do but want to make it more spicy, add a few dashes of hot sauce.
– If you need to store it, put it in an airtight container with plastic wrap against the top of the guac to keep it as green as possible.
